Roux Barbecue began as a backyard hobby that outgrew the backyard: too much brisket for one family, too many friends asking “when’s the next cook?” So we took the pit to the people. In Louisiana, a roux is where every great dish starts: slow, patient, worth the wait. That’s how we smoke.
